Cajun Chicken Pasta
















I got this recipe from the blog Plain Chicken. It is very easy to make and doesn't require a lot of expensive ingredients.

Here is what you need to get started: 

2 boneless, skinless chicken breasts, cut into thin strips or chunks
4 oz. of linguine (or whatever pasta you want), cooked al dente
2 teaspoons of cajun seasoning
2 tablespoons butter
1-2 heavy whipping cream
2 tablespoons chopped sun-dried tomatoes (I left this out because my husband and I do not like tomatoes)
1/4 teaspoon salt
1/4 teaspoon dried basil
1/8 teaspoon dried basil
1/8 teaspoon ground black pepper
1/8 teaspoon garlic powder
1/4 cup grated parmesan cheese

















Getting all the ingredients together is the hard part. Now it is time to begin! Cook the pasta as directed on the package. Next, you will need to put the chicken and cajun seasoning together in a bowl and mix until the chicken is coated well with the seasoning.


Add the two tablespoons of butter to a skillet set to low heat until butter is melted.
















 Turn the burner up to medium or medium high heat and add the chicken. Cook the chicken until it is no longer pink in the center, usually about 5 to 7 minutes.


Reduce heat and add heavy cream, tomatoes, basil, salt, garlic powder, and black pepper. Heat this until it heated all the way through and is starting to thicken. 
















Pour over hot linguine and toss with parmesan cheese.

Rotel Chicken Spaghetti















This is a really easy recipe and tastes wonderful! It is also budget
friendly if you are looking to save money.


Ingredients:
3-4 large boneless, skinless chicken breasts
1 can (10 3/4 ounce) Cream of Chicken Soup
1 can (10 ounce) Rotel Diced Tomatoes with Green Chilis
1 clove garlic, minced or 1/2 tsp. garlic powder
1/2 tsp. onion powder
1 tablespoon Margarine or butter
1- 8 ounce Velveeta cheese, cubed
8 ounces spaghetti, cooked and drained (I used angel hair pasta)

Directions:
1. Cut up chicken into bite size pieces.
2. In a large skillet melt butter or margarine.
3. Add cubed chicken, garlic, and onion.
4. Cook over medium-high heat until chicken is no longer pink and no liquid is left in the skillet.
5. Stir in soup, cheese, and Rotel Tomatoes.
6. Reduce heat to low and cook until the cheese melts, stirring constantly.
7. Stir in spaghetti and pour into a lightly greased 2-2.5 quart casserole dish.
8. Bake at 350 degrees for 30 minutes or until heated through.

Enchilada Lasagna



Ingredients:

1 lb. of ground beef

1 can of black beans

2 cups of salsa

1 cup of sour cream

1/4 cup fat-free zesty italian dressing

2 cups of shredded cheese

4 flour tortillas (burrito size)

2 tablespoons of Taco Seasoning


Directions:

1. Preheat oven to 400 degrees.

2. Brown meat, drain, and put back in the pan.

3. Add beans, taco seasoning, dressing, and salsa to the meat and mix with meat on

low.

4. Layer 2 tortillas on the bottom of a casserole dish.

5. Top with meat mixture, 1/2 cup of sour cream, and 1 cup of cheese.

6. Layer on 2 more tortillas.

7. Top with meat mixture, 1/2 cup of sour cream, and 1 cup of cheese.

8. Cover with foil.

9. Bake for 25-30 minutes with foil on and then 3-5 minutes with foil off.

10. Garnish with sour cream or lettuce if desired.


Makes about 8 servings.
